What kind of healthy dishes can you create with zucchini, mushrooms, lettuce, sweet bell pepper and cabbage? These vegetables were in a bag I bought in a local health food store. Check out the two dishes I made with these vegetables.
Green salad, avocado and spicy cod
The lettuce and sweet bell pepper came in handy to create a simple green salad topped with mashed avocado and spicy marinated cod. For the green salad I also added cherry tomatoes and cucumber. To marinate the cod fish, mix together 3 tablespoons of olive oil, 1 tablespoon of lime juice, 1-2 teaspoons chili powder (adjust to your level of spiciness), 1 teaspoon paprika, 0.5 teaspoon turmeric, 0.5 teaspoon cumin, 0.25 teaspoon black pepper, and 1 teaspoon salt. Cover the fish fillets in this mixture and let it marinate while preparing the salad. Cut the lettuce, slice the bell pepper and cucumber and quarter the tomatoes. Mix together and season with salt, pepper and olive oil. Mash an avocado and season with salt, pepper and olive oil. Melt butter in a hot pan and bake the fish fillets until flaky. Break them into smaller pieces. Serve the salad with the avocado and fish on top.
Cabbage wrap with zucchini, mushrooms and chicken
For this dish I combined the zucchini, mushrooms and cabbage with some delicious chicken thighs. Start by cutting the chicken thighs into pieces. Slice the zucchini and mushrooms. Melt some butter in a hot pan and bake the chicken. Remove the chicken from the pan and set aside. In the same pan, bake the zucchini and mushrooms until they start to soften. Add back the chicken and a little bit of chicken broth to create a little sauce. Season with salt and pepper. Serve the mixture in a sturdy leaf of cabbage.
