What kind of healthy dishes can you create with red beets, cabbage, celery and alfalfa? These vegetables were in a bag I bought in a local health food store. Check out the three dishes I made with these vegetables.

Red beet and goat cheese salad with pork

For this dish I made a salad out of red beets, carrots, cabbage, celery, alfalfa and goat cheese. I served it with a nice piece of pork. The only cooking I applied for the salad was roasting the beets in the oven. After peeling and slicing the beets, I sprinkled some olive oil on top, seasoned them with salt and pepper, and baked them in the oven until they start to soften. Combine all the ingredients for the salad and serve with a piece of baked pork.

Minced pork, feta, avocado, cabbage and alfalfa bowl

This easy recipe includes cabbage, avocado, feta cheese, marinated minced pork and alfalfa. The only cooking you need to apply is baking the pork. Melt some butter in a pan, add the minced pork, season with cumin, chili, paprika, cinnamon, salt and pepper, and bake until brown on all sides. Serve all of the ingredients in a bowl. The avocado and feta cheese will combine for a nice sauce.

Beet, carrot and celery soup

For this soup I combined red beets, carrots and celery. I served it with lentils, goat cheese and alfalfa. Start by melting some butter in a pan and add pieces of beet (peeled), carrots and celery. Then add 1 teaspoon of cumin, 1 teaspoon of turmeric and a quarter teaspoon of cinnamon. Toss well and bake for a minute or two. Cover the vegetables with vegetable broth, bring to a boil and let it simmer until the vegetables are soft. Blend the soup smooth with a stick blender or with a food processor. Add precooked lentils, serve in a bowl and garnish with goat cheese and alfalfa.
