I stumbled on this amazing company in Spain: Imperfectus. On this website you can order a box filled with 'imperfect' fruit and vegetables. I love it so much that I currently have a weekly subscription with them. Every Tuesday I receive a box of 8-10 kilos of fruit and vegetables that are considered too ugly in terms of shape or size to be sold in the supermarket. You do not know what will be in the box as it depends on what's in season, but the products are always fresh. One of the other advantages of this box is than none of the produce is wrapped in any plastic, unlike in all of the supermarkets here in Spain. Every week I will try to come up with new dishes inspired by the contents of my Imperfectus box.

This week's box included beets, spinach, broccoli, potatoes, onions, zucchini, peppers, carrots, pumpkin, tomatoes, oranges, tangerines, persimmons, pears and kiwis.

Potato and beet tacos

For my first dish I used a lot of products from this week's box. I made a hummus from the beets, I baked the potatoes and I made a pico de gallo from the tomatoes, peppers and onions. The things I bought from the store are chickpeas, garlic, tortillas and avocados.

Start by peeling the beets and cut them into pieces. Coat the beets in some olive oil, salt and pepper. Wrap the beets in aluminium foil and bake in the oven until they start to soften. Also put two cloves of garlic in aluminium foil and bake alongside the beets. Once the beets are baked, blitz them in a food processor with the garlic, one can of drained chickpeas and some lemon juice.

Peel and cut the potatoes and bake them in the oven with some olive oil, salt, pepper and parsley. For the pico de gallo, chop the tomatoes, peppers and onion and mix with a little bit of lime juice, salt and cilantro.

Once all the ingredients are prepared you can layer up your tacos. Start with a tablespoon of beet hummus, top with a couple of potatoes, add pico de gallo on top and finish with some slices of avocado. You can sprinkle some more beet hummus on top if you like.

Rice and veggies

The box arrived two days later than normal due to some festivities in Spain, so I didn't have a lot of time to prepare my dishes. My second dish, therefore, is a simple one: rice and baked vegetables. I used the broccoli, zucchini and carrots from the box and bought some rice in the store.

I boiled the broccoli until they started to soften. In the meantime, I baked sliced zucchini and carrots. Season the vegetables with salt and pepper. Prepare the rice as stated on the package. Once the rice is done, drain it and add some olive oil, salt, pepper, cumin, turmeric, ginger, paprika and a little bit of cinnamon. This will give an interesting taste to the rice.

Pumpkin Mac 'n' Cheese

My third dish of the week is a healthier version of Mac 'n' Cheese. I used the pumpkin and spinach from my box, while adding pasta, almond milk and parmesan cheese from the store.

Starr by peeling and cutting the pumpkin. Sprinkle with some olive oil, salt and pepper and bake for about 45 minutes in the oven until the pumpkin is soft. Blitz the pumpkin smooth with one cup of almond milk, salt, garlic powder, paprika and a little bit of cinnamon. If you like you can also melt some cheddar cheese in the sauce, but that could make the recipe a little less healthier. In the meantime, prepare the pasta as stated on the package. Once the pasta is done, mix together with the pumpkin sauce and add strips of spinach. Heat until the spinach is wilted. To finish, sprinkle some parmesan cheese on top.
