Boerschappen is a Dutch company that has different types of food boxes on offer (meat, fish, vegetarian, vegan). All of their products are bought directly from the farmers, without any interference of supermarkets or other stores. I find it very convenient to receive a box full of fresh produce every week. I love how these boxes give me inspiration to cook new dishes. Once a week I will share the food I made inspired by the contents of one of these boxes.
This week's vegan box included san marzano tomatoes, spinach, red bell pepper, oyster mushrooms, endive, chicory, cucumber, cress, apples, strawberries, apple juice and premade chili sin carne.
Tortilla wrap with endive and chorizo
For these tortilla wraps I used the bell peppers, half of the tomatoes and the endive from this week's box. Other things I added to the dish were tortilla wraps, chorizo, onion, garlic and Greek yoghurt. Start by cutting the chorizo into cubes. Add them to a hot pan and bake until crisp. Remove from the pan and set aside. Finely chop an onion and a clove of garlic, slice the bell peppers and cut the tomatoes into quarters. Bake the onion and garlic in the pan with the leftover chorizo fat until fragrant. Then add the bell pepper and tomatoes and bake for a couple of minutes. Smear some Greek yoghurt on a tortilla wrap and sprinkle a little bit of cumin, paprika, garlic and coriander herbs on top. Cut the endive into strips and lay them on top of the yoghurt. Then add the pepper and tomato mixture and some of the crispy chorizo. Wrap the tortillas and enjoy!
Hamburger with grilled chicory, mushrooms and blue cheese
For this hamburger dish I used the chicory and mushrooms from the box. I added a blue cheese, minced meat, bacon and a sourdough bread. Season the hamburger with salt, pepper and other herbs you like. I picked cumin, chili herbs and parsley. Mix together with you hands and form a ball for each burger. Flatten the balls until they are shaped like a burger. I didn't use any eggs or breadcrumbs, but they didn't fell apart at all. Slice the chicory and mushrooms and bake together until soft. Crisp up the bacon in a pan and bake the hamburger on both sides until cooked through. Stack your burger - slice of bread, blue cheese, chicory/mushrooms, burger, bacon, slice of bread.
Baked pasta with spinach and tomatoes
For my last dish I used the spinach and tomatoes from my box. Other ingredients in this recipe are penne pasta, passata, onion, garlic, cheddar and parmesan cheese. Prepare the pasta according to the packet instructions. Finely chop an onion and two cloves of garlic. Cut the tomatoes into quarters. Heat some olive oil in a pan and add the onion and garlic. Bake until fragrant. Add the tomatoes and bake for a minute or two. Add the passata, basil, salt and pepper and bring to a simmer. Add the spinach and cook until wilted. Add the cooked pasta and sauce to an oven dish and mix together. Add some grated cheddar cheese and mix it through the dish. Sprinkle some grated parmesan cheese on top and bake in the oven until the cheese has melted and crisped up a little bit.
